What angle do I cut for a hexagon?

60° at each joint, which is half of the 120° interior corner. Six pieces cut at 60° close the frame.

How do I find the miter angle for any polygon?

Take 180 divided by the number of sides. A pentagon is 180 ÷ 5 = 36°... actually the miter is 90 minus that, so 54°.
